In this fourth episode of the season, we travel to Delft to visit Restaurant Azurite, where we sit down with chef-owner Mario Ridder.

Located within Huis van Delft, just a short walk from the city’s historic center, Azurite represents the culmination of a remarkable culinary journey. After decades spent shaping Dutch gastronomy through some of the country’s most influential kitchens, Mario has created what may be his most personal project to date—a restaurant where hospitality, craftsmanship, and wine come together in a deeply considered dining experience.

Azurite is a restaurant built without compromise. Occupying an expansive space within Huis van Delft, the restaurant prioritizes comfort, atmosphere, and experience over efficiency. High ceilings, generous spacing, and carefully considered design create a sense of calm, allowing guests to focus on what matters most: the food, the wine, and the people around the table.

The culinary experience follows Mario’s philosophy of simplicity, precision, and respect for ingredients. Drawing on decades of experience, the menu balances technical excellence with restraint, allowing each product to speak for itself while delivering a journey that feels both refined and deeply personal.

Wine plays an equally important role at Azurite. With a cellar housing approximately 12,000 references, the restaurant boasts one of the most impressive wine collections in the Netherlands. From legendary producers in Burgundy and Bordeaux to hidden gems discovered through years of exploration, every bottle reflects Mario’s belief that wine is ultimately about creating memories.

Mario Ridder: A Lifetime of Experience

Few chefs have had a greater impact on modern Dutch gastronomy than Mario Ridder. His career has taken him through celebrated restaurants such as Parkheuvel, De Zwethheul, and Joelia, earning recognition and respect throughout the industry.

During our conversation, Mario reflects on the experiences that shaped him as a chef and entrepreneur, and explains how Azurite became the project that brought everything together. What began as an advisory role within Huis van Delft gradually evolved into a restaurant that rekindled his passion for hospitality and allowed him to create something entirely on his own terms.
