Pierre-Yves Colin-Morey (PYCM) is not a producer who treats “entry-level” wines as an afterthought, and this 2019 Bourgogne Aligoté proves exactly that. In a vintage known for its generosity, this Aligoté manages to stay focused and fresh, offering a style that is more about precision and definition than simple refreshment. It is a wine that feels deliberately made: clean, energetic, and quietly gastronomic, with a saline edge that keeps the palate awake.

This is not Aligoté as a sharp, one-dimensional aperitif. It is Aligoté with texture, structure, and a sense of seriousness—without losing the charm and drinkability that make the grape so appealing.

About the Winery

Based in Chassagne-Montrachet, Pierre-Yves Colin-Morey has become one of the modern benchmarks for white Burgundy. Since the mid-2000s, the domaine has earned a reputation for wines built on tension, purity, and a highly disciplined approach to élevage. The style is unmistakably “Colin”: bright, mineral, and layered, often with a subtle reductive signature that adds complexity rather than heaviness.

About the Wine

The 2019 Bourgogne Aligoté shows a pale straw colour with a bright, youthful sheen. On the nose, it opens with crisp orchard fruit and citrus—think green apple and lemon peel—supported by white flowers and a subtle waxy nuance that adds depth. There is also a stony, slightly saline character that immediately hints at its more serious intent.

On the palate, the wine is medium-bodied but driven by freshness. The texture is subtly fleshy, giving it a pleasing mid-palate presence, yet the overall impression remains incisive and linear. The acidity feels natural and well-placed, never aggressive, and the finish is clean, mineral, and lightly salty, with a refreshing grip that makes it feel highly food-oriented.

What stands out most is the balance: ripe enough to feel complete, but never soft or broad. It carries itself with restraint, and it finishes with a clarity that invites another sip rather than demanding attention.

Pairing suggestions
