In this special season finale, we travel to Mareuil-sur-Aÿ, in the heart of Champagne, to meet Mathieu Rolland-Billecart—seventh-generation family member and current leader of Champagne Billecart-Salmon. For more than two centuries, this family-run house has built a reputation for finesse, precision, and timeless elegance.

Mathieu shares his personal journey of stepping into the role of guardian of the family legacy, while balancing heritage with innovation. From the story of the house’s 1818 founding through generations of reinvention, we uncover how Billecart-Salmon continues to thrive as an independent producer in a landscape dominated by global corporations.
