In our fourth episode of Chefs and Cellars, we travel to the breathtaking Château Neercanne in Maastricht, a jewel in the crown of the Oostwegel Collection. Renowned for its Michelin-starred restaurant and five-star accommodations, Château Neercanne offers a unique fusion of history, luxury, and culinary excellence.  

Our guest for this episode is Dennis Vinck, the talented sommelier of Château Neercanne’s Michelin-starred restaurant. Join us as we dive into Dennis’s journey, starting as an ambitious intern at Château Neercanne to becoming its sommelier at the young age of 24. Dennis shares his passion for wine, the art of pairing, and how he collaborates with the kitchen team to craft unforgettable dining experiences.  

We explore what makes Château Neercanne so unique, including its status as the Netherlands’ only terraced castle, its rich history dating back to 1698, and its recent transformation into a luxurious hotel. Dennis also discusses the challenges and joys of curating a diverse wine list that balances classical regions with bold New World selections.

Perched in the lush Jeker Valley, Château Neercanne is an iconic destination that blends historic grandeur with modern elegance. The only terraced castle in the Netherlands, its layered gardens and panoramic views create a sense of stepping into a European fairy tale. Complementing its stunning architecture is a Michelin-starred restaurant and the Auberge, a Bib Gourmand lunch venue.  

With a focus on sustainability and local sourcing, the château’s kitchen incorporates herbs, honey, and produce from its own gardens, creating dishes that harmonize with Dennis Vinck’s expertly curated wine pairings.

Dennis Vinck  

Born and raised in Maastricht, Dennis Vinck’s passion for hospitality began early. Starting as an intern at Château Neercanne, Dennis’s ambition and talent quickly earned him a place on the team. Today, as sommelier, he curates a wine list that bridges tradition and innovation, ensuring every pairing enhances the dining experience. His dedication to storytelling at the table brings each wine to life, leaving guests with a lasting impression.
