Located in Corgoloin, between Nuits-Saint-Georges and Beaune, Domaine Gachot-Monot has been crafting honest, terroir-driven wines for five generations. Today, Damien Gachot continues the family tradition, working 18 hectares of vineyards spread across the Côte de Nuits and Hautes-Côtes de Nuits.
The domaine’s approach is resolutely traditional: manual harvests, natural fermentations, and careful use of oak to preserve the purity of fruit. Each cuvée reflects its parcel’s unique soil composition, allowing the wines to speak softly but distinctly of their origins.
The appellation Côte de Nuits-Villages includes vineyards from several communes, Corgoloin, Comblanchien, Premeaux-Prissey, Brochon, and Fixin, forming the connective tissue between the famed villages of the Côte de Nuits. The Les Chaillots vineyard sits on chalky, limestone-rich soils, known for producing wines of tension, minerality, and aromatic precision.
The 2021 vintage was marked by cool temperatures and low yields, resulting in wines with lifted aromatics, moderate alcohol, and a sense of freshness that recalls Burgundy’s more classical years.
In the glass, the 2021 Les Chaillots reveals a bright ruby hue, shimmering with clarity. The nose is subtle yet expressive, opening with red cherry, wild strawberry, and fresh earth, layered with faint floral hints and a whisper of sulfur typical of young Burgundy. With time in the glass, two hours or more, the wine reveals beautifully, revealing delicate notes of rose petals, green herbs, and a touch of spice.
On the palate, the wine is light-bodied yet persistent, offering a fine interplay of red fruit, gentle tannins, and a savory, earthy core. The texture is supple, and the acidity provides lift without sharpness.
